You can replace 8mm bolts with AN5 aircraft bolts. You can get them at aircraftspruce.com or many other sources. Stronger than Grade 8 and not as brittle. Their threaded portions are short, so no need to trim excess.
If you stay metric, make sure you are using grade 12.9 (the strong ones) and get them from a reputable source like mcmaster.com
That said, if you are breaking bolts, there is probably something wrong with the mount or the cases. Racing days are rare and it sucks when your stuff breaks. I’d probably replace the mount first as long as the cases look okay. If not, replace both.

Why not set your current kart up as an S5? Restricted airbox, restricted exhaust. Slower while you are learning for a fraction of the cost of swapping the GP10 for some 80 package. Or, even cheaper, just run what you have with higher gears.

Oh, this is specifically related to Kehein carbs, not that that should make much difference.

Get the longer bed. It’s a pain getting everything in there even with the extra space. You’ve got the right idea for the kart lift–I use a Yakima hitch mounted bicycle carrier to carry my kartlift pro.

Unless one brand of KZ is way better than all of the others, then its always going to be a question of which KZ is best for the track you are at. Better off with Stock Moto.
