As bill said the hubs tend to add a stiffer front end. But now most of the newer chassis run 25 mm spindles. Which they don’t make a direct spindle mount front wheel for which makes the you have to run the front hubs.

Hey Matt this decision is made purely by how your kart is handling. If you feel your kart is to tight coming out of the corners you probably will want to run the 6.0’s . But if you feel like you don’t have enough grip run the 7.10’s. When you run the y-pipe the majority of the people run 7.10’s though.

Personally I would get used to the kart first then decide if the kart and your driving style works better with the 7.10s or the 6.os

We have ran both the 2 disc and 3 disc in the can but have found that the 2 disc works better on larger tracks like new castle and the two are pretty even on the short tracks just due to the extra rotational mass on the 3 disc. On the Y pipe we have both as well and found that they are about even on track each have their own benefits but the 2 disc has less rotational mass which is the main reason most people run 2 disc in Yamaha. Personally we have switched to tomar 3 disc which has been a very good clutch on the     Y-pipe and the can.
