We just finished our second race in S3 and this time the Drack EV3 was working! After I downloaded the data I noticed that on slow corners where lots of down shifting is needed the RPM data goes crazy and goes up to >20K I know the motor can't rev to 20K so what is going on is this just noise in the data?

It very could well be turning 20,000 on the downshift. While it is true that the engine won't turn that high under power, it can be forced to turn that high on a downshift. It is not uncommon to see this with new drivers. You need to make sure that you are fully braking before you start to downshift as this will eventually break the engine. The data should show very little rpm increase on the downshifts.

Look at the data in graph form and check to see if it is a spike in the line.

It is most likely true that you are turning the #s you see. You should practice downshifts just prior to turn in, or just before applying the throttle. Braking with your trans will rapidly shorten the life of your crank.
