| How about a differential for the axle? Why aren't we doing that? Seems it would be very beneficial. |

Pretty consistently outlawed by most organizations.
They have been done over the years. The expense, complexity, failure rate, etc, etc, worked against then.
Also for a differential to be used efficiently, the chassis and rear brakes would have to be re-designed.
If you want to go faster, move up a class. If you want to go slower, buy a race car.

By the definition, its no longer a kart if you don't have a solid rear axle.

Karts don't need differentials since your inside rear should be lifted when you're cornering effectively eliminating the "scrub" caused by the solid axle.
I do have a ratchet hub though if you want to try it, they're used in outlaw dirt oval racing to reduce stagger. Dirt karts should keep all four of their tires on the ground unless they have enough power to do wheelies

Isn't that kind of opposite of what you want to do? That would put the drive on the inside corner rear wheel, causing a tendency to push, I would think. Of course, I never did this, so take it for what it's worth!

Yes it does change the handling quite a bit. It also eliminates one of the rear wheels from being able to brake so it's definitely for somebody that knows how to set it up.
What it does give you is much less drag down the straights since you can reduce or eliminate stagger.
