Pirooz.

In your original post you said the track is very short but nothing about the layout. Tell us more about the track or post a photo or map.
There are plenty of good tips here to investigate but one thing that needs to be mentioned and hasn't is that egt readings have a very strong correlation to the amount of time you are off the throttle relative to on the throttle. Even very short off throttle periods will cause the egt reading to fall dramatically and the recovery time to build the heat up again is much longer. If you are running on a real tight sprint track with lots of off throttle segments you may not see more than the egt numbers you cited.
This is why you should rely primarily on lap times and plug/header readings as your guide to determining the best carb settings. Once you dial it in to have a nice dry header with a medium to light brown color and a dry, medium to dark brown plug color you should be getting your best lap times and top rpm. That is when you note the egt reading at the point on the track where you have been at WOT for the longest stretch and then use that number as a referance thereafter.
I coach a group of guys that all run Leopards and all of the karts run very well with the carbs set at 1.25 on the Low speed needle and 1 on the high speed needle. Start there and run a short stint of 5 or 6 laps and then do a plug cut and see how it looks. Adjust as needed from there.

10 teeth on the clutch driver should give you more RPM than an 11 tooth driver with the same rear gear.

1.25 seems a little lean.
All carbs are different I know, we start a 2L 1H and tune from there.

On the Leopard 2 turns on the bottom makes the engine hard to start and it will not idle for long without loading up.
I often end up richening the Low on mine after 4 to 5 laps of hard running and end up at around 1-5/8 when I come off the track. The guys I coach all leave theirs alone and they run great but they don't drive as hard as I do so they don't build heat in the corners to need the extra fuel down low.
